Harvesting food during its peak season has numerous benefits: not only does it make your meals taste better and cost less, but it also provides your body with the essential nutrients it needs for optimum health in that season.

Leeks, in particular, are incredible immune-boosters during the cold months. Rich in vitamins B and C, calcium, iron, magnesium, manganese, phosphorus, potassium, and silicon, they make for an amazing superfood that keeps colds and flus at bay.

Apart from soups and pasta, leeks star in bakes, especially when paired with creamy sauces and melty cheese, like in this salmon and potato variation. Here's the quick and easy recipe!

Easy Leek-Potato Bake with Salmon

Ingredients for 4 servings

  • 2 garlic cloves, minced
  • 1 kg (2.2 lbs) of waxy potatoes, sliced
  • 3 leeks, cut into half-centimeter slices
  • 500 g (1.1 lbs) salmon fillet, cut into cubes
  • 2 eggs
  • 150 ml (1/2 cup) vegetable broth
  • 100 ml (1/2 cup) heavy cream or Greek yogurt
  • 50 ml (1/4 cup) milk
  • 1 tsp dill
  • 1 tbsp dried parsley
  • Salt and pepper, to taste
  • 80 g (3 oz) grated cheese, e.g., Emmental or Swiss cheese

Preparation

  1. Preheat the oven to 200°C (400°F) with top and bottom heat.
  2. Sauté the minced garlic in a bit of butter until fragrant. Set aside.
  3. Peel and slice the potatoes, and cut the leeks.
  4. Layer leeks, salmon, and potatoes in a baking dish, alternating between each ingredient.
  5. Mix the garlic, eggs, vegetable broth, cream or yogurt, milk, dill, parsley, salt, and pepper in a separate bowl.
  6. Pour the mixture over the layered vegetables.
  7. Bake for about 20 minutes, then sprinkle with grated cheese and bake for another 20 minutes, or until the cheese is golden brown.

Enjoy the delightful interplay of flavors as the tangy-sweet leeks, creamy potatoes, savory salmon, and melted cheese create a cozy winter meal!

Additionally, consider:

  • Healthy Twist: Swap cream for Greek yogurt to lighten up this dish.
  • Variations: Add cherry tomatoes, bell pepper slices, or mushrooms for added flavor and texture.
  • Wine Pairing: A crisp white wine, such as a Sauvignon Blanc, complements this dish beautifully.
  • Garlic Lover's Option: Add an extra garlic clove, crushed, to the veggie mixture for an even garlic-forward flavor.
